Pumpkin adds a rich, moist texture to these crisp, golden waffles. White whole-wheat flour is ground from a variety of wheat that has a lighter color and milder flavor than standard whole-wheat flour. If your market doesn’t carry it, you can substitute regular whole-wheat.

  1. In a small bowl, stir together flours, sugar, baking powder, cinnamon, and salt. In a large bowl, whisk together milk, pumpkin, eggs, ¼ cup oil, vanilla, and orange zest. Add flour mixture and stir just until combined.
