These satisfying breakfast potatoes are delicious alongside any egg dish, or even a tofu scramble. Use the roasting time to prepare the rest of your breakfast components. Use a combination of sweet potatoes and garnet yams for a pretty orange-and-red dish.

Ingredients

  • orange-fleshed sweet potatoes, 2 lb (1 kg), peeled and cut into ½-inch (12-mm) cubes

Method

  1. Preheat oven to 400°F (200°C).
  2. Put sweet potatoes, shallots, and garlic in a roasting pan. Drizzle with olive oil and sprinkle with salt and pepper. Toss to mix well and coat potatoes thoroughly with oil and seasonings.
