Leftover cooked quinoa works wonderfully in these savory, flavorful vegetarian burgers, which are enlivened with a hint of tangy barbecue sauce and pan-fried. Add even more toppings, if you like, such as baby spinach leaves, avocado, and tomato slices.

Ingredients

  • red onion, 1, ½ coarsely chopped, ½ sliced
  • garlic, 1

Method

  1. In a food processor, whirl chopped onion and garlic until finely minced. Add black beans and pulse until mixture is a chunky purée. Transfer to a bowl.
  2. Add quinoa, bread crumbs, egg yolk, barbecue sauce, cumin, and salt to bowl and fold in just until combined. Do not overmix. If you have time to chill mixture for about half an hour (or up to 1 day), the patties
