Soba noodles are typically made from buckwheat flour, although some are a blend of buckwheat and regular wheat; either will work well in this recipe. The key to cooking them is to boil them gently in plenty of water and then rinse them immediately under cold water.

Ingredients

  • dried soba noodles, 8 oz (250 g)
  • olive oil, 2 Tbsp

Method

  1. Bring a large pot of water to a boil over high heat. Add soba and cook gently, stirring once or twice, just until tender, about 7 minutes. Drain in a colander, reserving 3 tablespoons cooking water, and immediately place noodles under cold running water to cool and rinse well.</
