Chipotles are smoked, pickled jalapeño chiles. To make chipotle purée, in a blender or food processor, whirl the contents of a 7-oz (220-g) can of chipotle chiles in adobo sauce until smooth. Transfer to an airtight container and store in the refrigerator for up to 3 weeks.
