Here, sweet, seedless watermelon is puréed and frozen for the ultimate summer dessert. Other types of summer melons, such as cantaloupe or honeydew, would work here as well; taste and adjust the amounts of sugar and lime juice before freezing.

Ingredients

  • seedless watermelon, 3 lb (1.5 kg), peeled and cut into 1-inch (2.5-cm) cubes (about 4½ cups/20 oz/625 g)
  • sugar

Method

  1. In a blender, whirl watermelon, sugar, and lime juice until very smooth. Pour into a large shallow bowl.
  2. Place bowl in freezer. Stir mixture about every hour, breaking up any ice crystals with a fork, until mixture is granular and slushy, 4–6 hours. Cover and freeze for up to 1 day, or spoon into tall glasses, top with a few slivers of mint, and serve at once.
