I love the meaty richness of this strictly vegetarian mushroom stuffing, which makes a great filling for blinzes, kreplach, pirogi, and knishes. It contains only three main ingredients, but the flavor seems to go on forever. For an exotic touch, you could use shiitakes or portobellos (or a mixture of the two). There’s also nothing wrong with adding a spoonful of chopped fresh dill.
