Hummus (garlicky chickpea dip) is a Middle Eastern meze (appetizer) that’s become one of Israel’s national snacks. The traditional version would be made with raw garlic—lots of it. You can certainly prepare the following hummus in this fashion: it will be delicious. (I’d cut back the garlic to 2 or 3 cloves.) I once had the idea to make hummus with roasted garlic: the sweet, complex flavor was an instant hit.
