Baba ganoosh (eggplant dip) has become such a fixture in the North American diet it’s easy to forget the dish originated in the Middle East and that Israelis have enjoyed it for decades. The correct way to prepare it is to char the eggplants over a charcoal fire: this imparts an intense smoky flavor, which makes authentic baba ganoosh one of the most delectable dips ever to cross a wedge of pita bread. You could certainly use a gas grill to char the eggplant. I’ve even seen Israelis roast t
