Carrots have always had important symbolic significance in Judaism: the coinlike appearance of sliced carrots symbolizes money and by extension prosperity, while the Yiddish word for carrot, mehren, also means “to multiply.” This unusual carrot salad would be one of the half dozen or more salads served at a Moroccan holiday feast. Orange-flower water is a perfumed flavoring found at Middle Eastern and Indian markets: add a few drops and you’ll never think about carrots in quite the same way
