Here’s another salad you might find on an Israeli meze platter. No, you don’t need to worry about onion breath: parsley and sumac are natural breath fresheners, counterbalancing the pungency of the green onions. Sumac is a tart purple seasoning made from a Middle East berry. Look for it in Middle East markets.
Place the garlic and salt in the bottom of an attractive serving bowl and mash to a smooth paste. Stir in the lemon juice, green onions, parsley, and pepper. Correct the seasoning, adding salt and/or lemon juice to taste.
Drizzle the salad with olive oil and sprinkle with sumac. Serve with wedges of pita bread for scooping.
