The following “muffins” resulted from an attempt to make a matzo meal popover. I never was able to get the puffs to soar to popover grandure, but I did create a highly tasty breakfast pastry with the steamy lightness of a hot muffin.


  • Spray oil
  • 1 cup skim milk
  • ½ teaspoon sugar


  1. Preheat the oven to 400 degrees. Spray a muffin tin or popover mold (preferably nonstick) with spray oil.

  2. In a mixing bowl, combine the milk, sugar, salt, egg substitute, and oil and whisk to mix. Whisk in the matzo meal. (Or combine the ingre
