I love fried matzo and can eat it happily for all eight days of Passover. But after five or six mornings of fried matzo, my family clamors for a break. So I invented these matzo meal pancakes, which owe their airy lightness to the addition of stiffly beaten egg whites. If you like a sweet pancake, you can add the vanilla; otherwise, omit it.
