Long before anyone in America had heard of burgers or wraps, Jews were eating knishes. Talk about the perfect snack or finger food: knishes are self-contained bundles of edible bliss, featuring a rich, moist, meaty filling in a savory crust. I recently discovered a trick for forming perfectly round knishes: I bake them in muffin tins. You could also make these knishes as half-moon-shaped turnovers, following the instructions in the kasha knish recipe.
