This rich, colorful “gravy” (actually, it’s more a tomato sauce) owes its complex flavor to the addition of mushroom powder. The latter, made from ground dried mushrooms, can be found at gourmet shops and natural food stores. (One good mail order source is Marché aux Délices, P. O. Box 1164, New York, N.Y. 10028; telephone 888-547-5471.) If unavailable, you can make your own mushroom powder by pulverizing dried porcini or Chinese black mushrooms in a spice mill.
