Bulghur (cracked wheat) has a soulful, earthy, nutty flavor, which makes it popular throughout the Middle and Near East as an ingredient in salads, casseroles, and meat dishes. In this recipe, the bulghur is prepared pilaf-style. Try it with lamb or as a light vegetarian entrée.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 clove
