These tiny pearls of pasta are newcomers to the American food scene and, oddly, chefs seem to know more about them than civilians. Which is a shame, because Israeli couscous has a deliciously chewy texture and the ability to absorb flavors readily. And it’s quick and easy to cook. Look for it in gourmet shops, ethnic markets, and many supermarkets.
