To most Americans, coleslaw means shredded cabbage in a creamy mayonnaise sauce. Here in Miami at the great Jewish-style restaurants—the Rascal House, the Pub, the late Wolfie’s, and the late Famous—coleslaw was a simpler and healthier affair, a naturally low-fat salad of shredded cabbage and carrots lightly pickled in sweetened vinegar. Serve this slaw as part of a pickle spread or on any occasion you’d serve traditional coleslaw.
