This aromatic spice mix plays pinball on your tastebuds, delivering turmeric and cumin for pungency, plenty of black pepper for bite, and cardamom and cloves for a touch of sweetness. Hawaij came to Israel with the Yemenite Jews, but today Israelis of all ethnic persuasions rub it on meats and seafood for grilling and add it to soups and stews. There’s even a sweet hawaij for adding to coffee.
