These nutty meringues are traditional holiday treats among the Jews of Rhodes in Greece. Many cooks place whole blanched almonds atop the meringues. I like the craggy look of slivered almonds. For extra flavor, I like to add cinnamon (again, not traditional) and a bit of turbinado sugar (also known as sugar in the raw). To make chocolate asuplados, add 2 tablespoons cocoa powder.
