Pico de gallo is low in sodium, with a bright, vibrant flavor from the fresh lime juice. It can be eaten on its own or used to top nachos, enchiladas, and tacos. It goes especially well with Ensalada de Pollo. Add diced avocado and serve it with Tortillas Doradas as a dip. If you have leftover pico de gallo, sauté it and scramble with eggs. It will keep for about two days in the refrigerator but is best if used fresh.
