This is one of the most delicious salsas you will ever eat. It takes a little bit of time to prepare, but the steps are easy, and the flavor is out-of-this-world good! If the salsa is too tart, add a bit of sugar to balance the flavor.

Ingredients

  • 1 pound (455 g) tomatillos (about 12 medium), husked and rinsed to remove stickiness
  • ½ onion

Method

  1. Place the tomatillos, onion, jalapeño, and garlic in a large, dry, heavy skillet over medium-high heat. Allow to char slowly, but not burn, turning frequently to allow all sides to cook, 25 to 30 minutes. Remove from the heat.
  2. Transfer to a blender with the cilantro, salt, and pepper. Remove the blender lid’s center insert and cover with a clean kitchen towel.
