This salad is so simple and keeps well in the refrigerator for two to three days. Cabbage is rich in vitamins A, C, E, and K, as well as fiber. This recipe combines this nutritious vegetable with heart-healthy avocado, which forms a creamy, delicious dressing!

Ingredients

  • One 10-ounce (283 g) package shredded cabbage (about 4 cups)

Method

  1. Place the cabbage in a large bowl.
  2. In a separate bowl, mash the avocado, then mix in the lime juice, oil, salt, and pepper until well blended.
  3. Add to the cabbage and mix well. Just before serving, add the tomatoes and toss to combine.
