Ingredients

  • ¼ cup (60 ml) white wine vinegar
  • 1 tablespoon extra virgin olive oil

Method

  1. Combine the vinegar, oil, garlic, and cilantro in a medium bowl.
  2. Add the chickpeas, onion, and pimientos and mix well. Cover and refrigerate, stirring occasionally, for at least 3 hours.
