Jicamas have a cool, crisp taste. Peel the jicama much as you would a potato, removing the outer skin. Combining the jicama with apples and tossing in a citrus dressing makes a wonderful salad that is a great accompaniment for Pollo Adobado. It can also be served as a light appetizer.

Ingredients

  • Lettuce leaves
  • cup (80 ml) fresh lime juice
  • 1 teaspoon

Method

  1. Line a large platter with enough lettuce leaves to cover the bottom.
  2. Mix the lime juice, sugar, and salt in a large bowl. Add the apples and jicama and toss to combine.
  3. Arrange the mixture, alternating apples and jicama, on the lettuce leaves. Dust lightly with chili powder, if desired.
