Mexican Street Corn Salad

In Mexico, it’s common to see street vendors selling elotes, roasted corn on the cob seasoned with lime, chili powder, and mayonnaise. This delicious salad has many of the same flavors. To add a little crunch, top it with crushed baked tortilla chips (Tortillas Doradas). Add diced avocado for even more flavor!
