This recipe is an adaptation of one of my mother’s recipes—my children have all tested it and gave it rave reviews. You can add diced potatoes to this stew before simmering for a filling one-pot meal.
Heat the oil in a Dutch oven or large pot over medium heat. Add the chicken and cook until slightly browned and cooked through, 10 to 15 minutes.
Add the garlic and sauté for 1 minute. Add the spice blend, tomato sauce, and salt and stir to combine. Bring to a slight boil, then reduce the heat to low. Cover and simmer for about 5 minutes, until the tomato sauce
