This rice, a family favorite, gets its wonderful flavor from the addition of garlic, corn, and bay leaves. I like to prepare it in advance and freeze it, because it makes a fabulous dish for entertaining. To make this with brown rice, increase the water per package instructions and the simmering time to 50 minutes. Roast the corn beforehand to make the rice even more flavorful!
