Brown rice is healthier than white because it has important nutrients such as iron, manganese, protein, and fiber. This flavorful recipe incorporates peppers, onions, and Mexican spices. Serve it alongside Enchiladas Suizas.

Ingredients

  • 1 tablespoon extra virgin olive or canola oil
  • ½ cup (60 g) chopped

Method

  1. Heat the oil in a large skillet over medium heat. Sauté the onion and peppers until the onion is translucent, 5 to 6 minutes. Add the garlic, cumin, and rice and stir to combine.
  2. Add the hot broth and bring to a boil. Reduce the heat to low, cover, and simmer for 45 minutes, or until the rice is tender. Fluff and serve.
