  • About

This typical Mexican rice dish incorporates dried shrimp, which gives it a distinct seafood flavor. Make this recipe with brown rice by increasing the water per package instructions and the simmering time to 50 minutes.

Ingredients

  • 1 cup (200 g) white basmati rice
  • 2 tablespoons diced tomatoes

Method

  1. Bring 2 cups (480 ml) water to a boil in a medium saucepan. Add the rice, tomatoes, shrimp, and salt. Allow to come to a boil again.
  2. Cover, reduce the heat to low, and simmer for 20 minutes, or until the rice is tender. Fluff before serving.
