Granny Annag’s baking was famous in the MacQueen household, and Peter’s favourites were her griddle pancakes. Have your favourite dishtowel by the side of the stove and pop the pancakes in there to keep them warm while you make up your next batch.

Ingredients

  • 230 g self-raising flour
  • 60 g butter
  • ½ teaspoon

Method

Rub your flour and butter together to make breadcrumbs.

Add your cream of tartar, bicarbonate of soda, sugar, golden syrup, milk and eggs. Use a knife to stir everything together.

Place heaped tablespoons of the batter on a warm griddle pan. A cast-iron skillet or frying pan will also do.

When bubbles start popping on the pancake, flip and cook for another 45 seconds.
