The long summer days make Scotland the perfect place to grow raspberries – and strawberries! I love that there is a burst of flavour in every slice, complementing the sweet honey in this simple sponge cake.

Ingredients

  • 75 g butter
  • 60 g soft brown sugar
  • ½ teas

Method

Preheat the oven to 180°C/350°F.

Cream the butter, sugar, vanilla and honey until light and fluffy.
