Oatcakes have been part of the Scottish diet for hundreds of years and still very popular today. You will need a traditional gingerbread man – or woman – cutter to make these. And if you are lucky enough to have a dog-shaped cutter perhaps you could make some oaty canine companions too!

Ingredients

  • 200 g rolled oats
  • 50 g pinhead or steel-cut oats, plus a little extra for dusting

Method

Preheat your oven to 180°C/360°F. Line a baking tray with baking paper.

Stir the rolled and pinhead oats together, then blend 100g of the oats mix you have just made to create oat flour and return to the bowl.

Add your salt and sugar.
