And here is Peter’s favourite of my bakes. I make it extra gingery (is that even a word?!) by adding ginger paste. It can be served plain, but I love an orange butter icing smothered on top.

Ingredients

For the loaf

  • 90 g soft brown sugar
  • 90 g butter
  • 90

Method

Preheat your oven to 180°C/350°F.

Into a saucepan add your brown sugar, butter, golden syrup and ginger paste. Stir over a low heat until the butter has melted and the ingredients have combined. Now let that cool for 5 minutes.

Stir in your milk and whisk in an egg.
