Peter’s mum Morven told me this was his favourite cake growing up and now it’s one of mine. Beautiful light sponge with soft apple chunks – as we say in Gaelic, blasta!

Ingredients

  • 90 g butter
  • 90 g sugar
  • 90 g

Method

Preheat the oven to 180°C/350°F.

Into a bowl add the butter, sugar, flour and eggs and combine together with a hand mixer.

Peel and chop your apple into wee chunks. Add to the batter along with the zest of a lemon.
