Peter grew lots of courgettes in the garden last season and this was one of our favourite recipes to use up our bountiful crop. For those of you who are Marmite lovers, add a teaspoon to the mix to give it an even more distinctive flavour.

Ingredients

  • 225 g self-raising flour
  • 1 teaspoon baking powder
  • 55 g

Method

Preheat the oven to 220°C/430°F.

Sift the flour and baking powder into a bowl, then add the soft butter and rub it in with your fingertips until the mixture resembles breadcrumbs.
