You can’t have a proper full Scottish breakfast without potato scones, and once you made them at home, you won’t go back to shop bought!

Ingredients

  • 350 g potatoes
  • 2 eggs
  • 50 g butter, plu

Method

Boil your potatoes in salted water, drain and let them dry out completely in the pan.

Mash the potatoes and add the eggs, butter, baking powder, salt and flour. Use your hands to blend it all together and flatten out to about a 2cm thickness.

Cut the dough into a batch of chunky scones; you can choose to make them squares or triangles.

Griddle in butter for 4 to 5 minute
