There are many reasons I love visiting Maine and Massachusetts every summer, but the main one is lobster mac ‘n’ cheese! We’re lucky that Peter’s dad sets lobster creels near our hut, so I’ve brought this great recipe back to Scotland with me.
Simmer the lobster tails in a large pan of water, uncovered, for 8 to 10 minutes or until the shells turn bright red. When cooled, separate the lobster meat from the tails and chop into bite-sized chunks.
Add the white wine to a pan and then add the lobster tail shells. Simmer for 5 minutes. Strain to keep the wine.
