Bread and butter pudding was first described in Eliza Smith’s The Compleat Housewife written in 1727 – and it is still a household favourite across Scotland. It’s often recommended to use bread that is going stale as it soaks up more of the lovely custard! The addition of cranberries and marmalade balances the sweetness of the pudding perfectly. You might like to use homemade marmalade in this recipe.
