If you want to make me happy, pour gravy over my roast dinner and custard over my pudding. Simple! It doesn’t really matter what is underneath!

This vanilla custard recipe is perfect to pour on crumbles, sponges and puddings.

Ingredients

  • 1 vanilla pod
  • 50 g sugar
  • 2 egg yolks

Method

Slice the vanilla pod and scrape out the vanilla seeds.

In a bowl, whisk together your sugar and egg yolks until shiny and pale. Add the cornflour and whisk again.

Into a saucepan, add your cream, milk and vanilla seeds along with the pod. Simmer but take off the heat before it boils and remove the pod.

Whisking constantly, pour a wee bit of the hot milk over the egg mix
