The island of Jura is sixty miles off the west coast of Scotland. Part of the Inner Hebrides, it has a community of 212 people and one whisky distillery – I like that ratio! Their whisky works perfectly in this rich truffle recipe.

Ingredients

  • 300 g dark chocolate
  • 200 ml double cream
  • 80 g

Method

Roughly chop the chocolate and place in a large bowl.

Add the cream and butter to a saucepan. Once it comes to a boil, pour over the chocolate and add the espresso powder.

Whisk the chocolate mixture until it starts to thicken (about 5 minutes), then add the Jura whisky.

When the chocolate is thick enough to hold its shape, spoon into a piping bag. Pipe the truffles onto
