As the chill of autumn sets in, there’s nothing quite as comforting as this vegetarian lunch dish. This quick, hearty recipe, flavoured with leeks and cheese, is just as good, if not better, than its sweet counterpart. Just don’t tell that to my Marmalade Bread & Butter Pudding recipe from my first book! You can use up stale bread for this recipe; it’ll soak up the flavours even better.
