Though a slice of classic millionaire shortbread is near perfection on a plate, I have to say replacing the shortbread with a rice cereal base has made me fall in love with this three-layered treat all over again. It makes the recipe a bit more kid friendly, but find me an adult who wouldn’t love this? Impossible!
Line a 20cm x 20cm (8” x 8”) brownie tin with baking parchment.
Heat the sugar and butter in a pan, gently stirring until melted. Add the condensed milk and bring to a boil, stirring continuously for a minute or so or until the caramel you have just created has thickened.
Put one-third of the caramel into a bowl and mix in the rice cereal. Gently press the mixture into the base
