With their signature scalloped shell shape and golden exterior, the brown butter in these madeleines, made with Breton butter, infuses the cakes with a rich, nutty flavour that complements their delicate sponge texture to perfection. Dust with icing sugar and serve warm from the oven.
Melt the butter in a small saucepan until sizzling. Now, watch carefully: the butter will foam and, when the foam subsides, it will turn from yellow to a hazelnut brown – this is when you need to catch it. Remove from the heat and leave to cool.
