Loch Duart Salmon Wellington

My first weekend job when I was at school was working with my brother Murdo at a salmon farm in Marvig on the Isle of Lewis. Now, when selecting salmon for my kitchen, I always choose Loch Duart salmon. Their salmon are grown in the cold, clear waters of northwest Scotland, giving them a beautiful colour and a firmer texture. This sought-after salmon has graced the world’s most discerning tables; it was even served to guests at the royal wedding of Prince William
