If you’re looking for a bite-sized festive treat this Christmas, these pistachio cream-filled profiteroles are guaranteed to bring a smile to everyone’s face. They are decorated to resemble wee Christmas puddings, complete with all the festive trimmings. They’re the very definition of a Christmas cracker!

Method

To make the profiteroles

Sieve the flour and cocoa into a bowl.

Place the butter, sugar and water in a small saucepan and heat until the water just reaches boiling point and the butter has melted. Remove from the heat and add the flour and cocoa and beat the mix with a wooden spoon to form a smooth paste. Return to a gentle heat and stir for a minut
