Spain can learn from the French and the Italians when it comes to marketing their cheeses internationally. Manchego, the cheese of La Mancha, is one that broke through to other countries’ radar. Still, it typically only appears on cheese boards alongside olives, hams, and peppers. In Spain, however, one finds the cheese on sandwiches, in pastry, marinated, and mixed in with other flavorful friends. This is one of the simple and best we’ve encountered.
