Many possible histories led to the creation of the cremaet, but our favorite relates to trade between Valencia and Cuba. Plenty of rum made its way to the Spanish coast, but rum didn’t meet the taste of the locals, as it was much stronger than the brandy they would typically add to a coffee in a carajillo. So, they took to burning the rum floating atop the drink to dull the sting. Infusion of cinnamon and citrus also helped.
