Horchata in Spain is horchata de chufa, or tiger-nut milk, and is not to be confused with horchata de arróz, which is Mexican and made of rice. The drink is originally Northern African and meant to be cooling in hot climates. These days, it’s common to see variants at places known for the good stuff, and the frozen, frappé-like version is hot.
