Pickled walnuts are one of those old-fashioned, almost forgotten British condiments. Their sweet, acidic taste works brilliantly in a dressing. This one goes really well with beetroot or cheese-based salads, though once you’ve tasted it you’ll probably want to put it on everything.

Ingredients

  • 2-3 good-quality pickled walnuts, chopped, plus 2 tbsp of their juice
  • 4-5 tbsp cold-pressed

Method

Whisk all of the ingredients together in a bowl or shake in a screw-topped jar or bottle, seasoning with salt and pepper to taste.
